Grilled Peach Chicken Salad

A fresh and flavorful summer salad featuring juicy grilled peaches, tender chicken, mixed greens, and a tangy balsamic dressing.

  • 2 boneless, skinless chicken breasts
  • 2 ripe peaches, halved and pitted
  • 6 cups mixed salad greens
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and black pepper, to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Season chicken breasts with salt and pepper, and brush with 1 tablespoon of olive oil.
  3. Grill chicken for 6–7 minutes per side or until fully cooked and internal temperature reaches 165°F (75°C). Remove and let rest before slicing.
  4. Brush peach halves with a bit of olive oil and grill for 2–3 minutes per side until grill marks appear and peaches are slightly softened. Remove and slice.
  5. In a small bowl, whisk together remaining olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
  6. In a large bowl, combine mixed greens, sliced red onion, grilled chicken, grilled peaches, and nuts if using.
  7. Drizzle with dressing and sprinkle feta cheese over top before serving.

Notes

  • Use goat cheese as an alternative to feta for a creamier texture.
  • To save time, use store-bought rotisserie chicken.
  • Add avocado slices for extra creaminess.
  • Best served fresh, but can be stored without dressing for up to 1 day in the fridge.
