In a bowl, combine ground turkey, chopped onion, minced garlic, Worcestershire sauce, Dijon mustard, smoked paprika, salt, and pepper. Mix gently until just combined.
Divide mixture into 4 equal portions and shape each into a 1-inch (2.5 cm) thick patty.
Brush grill grates with oil. Place patties on grill and cook for 5–6 minutes per side, or until internal temperature reaches 165 °F (74 °C).
During the last 1–2 minutes of cooking, toast buns cut-side down on the grill.
Assemble burgers by placing a lettuce leaf on the bottom bun, then turkey patty, tomato slice, onion slice, and desired condiments. Top with the bun.
Let burgers rest for 2 minutes before serving to retain juices.
Notes
Do not overmix the turkey to keep burgers tender.
Let patties rest for 2 minutes before serving to retain juices.
For extra flavor, stir in chopped fresh herbs like parsley or cilantro.
These can be cooked on a stovetop griddle if a grill isn’t available.
