Horchata
Horchata is a refreshing and creamy traditional Mexican beverage made from rice, cinnamon, sugar, and milk, often served chilled over ice.

- 1 cup long-grain white rice
- 4 cups water (divided)
- 1 cinnamon stick
- 1 cup milk (whole or evaporated)
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- Ice cubes (for serving)
- Rinse the rice under cold water until the water runs clear.
- In a blender, combine the rinsed rice, 2 cups of water, and the cinnamon stick. Blend until the rice is coarsely ground.
- Pour the mixture into a bowl, add the remaining 2 cups of water, and let it soak at room temperature for at least 4 hours or overnight.
- Strain the rice mixture through a fine-mesh sieve or cheesecloth into a pitcher, discarding the solids.
- Stir in the milk, sugar, and vanilla extract until the sugar is dissolved.
- Chill the horchata in the refrigerator until cold.
- Serve over ice and enjoy.
Notes
- For a dairy-free version, use almond milk or oat milk instead of dairy milk.
- Adjust sweetness to taste by adding more or less sugar.
- Horchata can be stored in the refrigerator for up to 3 days.
