- 1 bunch kale, stems removed and leaves chopped
- 2 medium apples, thinly sliced
- 1/2 cup walnuts or pecans, toasted
- 1/4 cup dried cranberries
- 1/4 cup feta cheese, crumbled (optional)
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tsp honey or maple syrup
- Salt and pepper to taste
- Wash and dry the kale, remove stems, and chop into bite-sized pieces.
- In a large bowl, massage the kale with a little olive oil for 2–3 minutes until tender.
- Add sliced apples, toasted nuts, dried cranberries, and feta (if using) to the bowl.
- In a small bowl, whisk together olive oil, apple cider vinegar, lemon juice, honey, salt, and pepper.
- Pour the dressing over the salad and toss well to combine.
- Serve immediately or chill for 10–15 minutes before serving.
Notes
- For extra crunch, add pumpkin or sunflower seeds.
- Use a sweeter variety of apple like Fuji or Honeycrisp for balance.
- Omit the cheese for a vegan version.
