Kale & Apple Salad

A refreshing and nutritious salad made with crisp apples, hearty kale, crunchy nuts, and a light tangy dressing. Perfect as a side dish or a light meal.

Ingredients

  • 1 bunch kale, stems removed and leaves chopped
  • 2 medium apples, thinly sliced
  • 1/2 cup walnuts or pecans, toasted
  • 1/4 cup dried cranberries
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Wash and dry the kale, remove stems, and chop into bite-sized pieces.
  2. In a large bowl, massage the kale with a little olive oil for 2–3 minutes until tender.
  3. Add sliced apples, toasted nuts, dried cranberries, and feta (if using) to the bowl.
  4. In a small bowl, whisk together olive oil, apple cider vinegar, lemon juice, honey, salt, and pepper.
  5. Pour the dressing over the salad and toss well to combine.
  6. Serve immediately or chill for 10–15 minutes before serving.

Notes

  • For extra crunch, add pumpkin or sunflower seeds.
  • Use a sweeter variety of apple like Fuji or Honeycrisp for balance.
  • Omit the cheese for a vegan version.
