Ingredients

Scale
  • 200g unsalted butter, softened
  • 200g light brown sugar
  • 4 large eggs
  • 200g self-raising flour
  • 50g cocoa powder
  • 1 tsp baking powder
  • 100ml whole milk
  • 150g Maltesers, crushed
  • 300ml double cream
  • 200g Maltesers spread
  • 100g dark chocolate, melted (optional for ganache)
  • Extra Maltesers for decoration

Instructions

  1. Preheat the oven to 180°C (160°C fan) and grease and line two 8-inch cake tins.
  2. In a large bowl, beat together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well between each addition.
  4. Sift in the self-raising flour, cocoa powder, and baking powder, then fold into the mixture.
  5. Gradually stir in the milk until you achieve a smooth batter.
  6. Divide the batter evenly between the cake tins and bake for 25–30 minutes, or until a skewer comes out clean.
  7. Allow cakes to cool in the tins for 10 minutes before transferring to a wire rack to cool completely.
  8. Whip the double cream until soft peaks form, then fold in the Maltesers spread.
  9. Spread half of the cream mixture over one cake layer, sprinkle with crushed Maltesers, and top with the second cake layer.
  10. Use the remaining cream to cover the top of the cake and decorate with whole and crushed Maltesers. Drizzle with melted dark chocolate if desired.
  11. Chill for at least 30 minutes before serving.

Notes

  • You can substitute Maltesers spread with a mix of crushed Maltesers and chocolate hazelnut spread.
  • For extra chocolate richness, add a layer of ganache on top.
  • Store in the fridge for up to 3 days.
