Mango Pudding

- 2 ripe mangoes, peeled and chopped
- 1/2 cup sugar (adjust to taste)
- 1/2 cup milk
- 1/2 cup heavy cream
- 1 tbsp gelatin or agar-agar powder
- 1/4 cup warm water
- 1 tsp vanilla extract (optional)
- Mint leaves or mango slices for garnish (optional)
- Puree the chopped mangoes in a blender until smooth.
- Dissolve the gelatin or agar-agar in warm water and let sit for a few minutes.
- In a saucepan, combine the mango puree, sugar, milk, and heavy cream. Heat on low, stirring until the sugar is dissolved.
- Add the dissolved gelatin mixture to the mango mixture and stir well until fully incorporated. Do not boil.
- Remove from heat and add vanilla extract if using. Let it cool slightly.
- Pour the mixture into serving cups or bowls. Refrigerate for at least 4 hours or until set.
- Garnish with mint leaves or mango slices before serving if desired.
Notes
- Use ripe, sweet mangoes for best flavor.
- You can substitute agar-agar for a vegetarian option.
- Adjust sugar depending on the sweetness of mangoes.
