  • 2 tbsp maple syrup
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the carrots with olive oil, maple syrup, salt, pepper, and thyme (if using) until evenly coated.
  3. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  4. Roast for 25-30 minutes, turning once halfway through, until carrots are tender and slightly caramelized.
  5. Serve warm, garnished with fresh herbs if desired.
