- In a clean, dry bowl, beat egg whites until foamy, then gradually add granulated sugar and beat until stiff peaks form.
 
- Gently fold the dry ingredients into the meringue until the batter flows like lava (macaronage).
 
- Divide batter and color each portion with different gel food colorings to create the mermaid effect.
 
- Pipe shell shapes onto a parchment-lined baking sheet using a piping bag fitted with a round tip.
 
- Tap the baking sheet to release air bubbles and let the macarons rest for 30-60 minutes until a skin forms.
 
- Preheat oven to 300°F (150°C). Bake for 15-18 minutes until set.
 
- Let macarons cool completely before removing from parchment.
 
- For the filling, beat butter until creamy, then add powdered sugar, vanilla, and cream until fluffy.
 
- Pipe filling onto half the shells and sandwich with another shell.
