Mexican Wedding Cookies

Mexican wedding cookies are delicate, buttery shortbread-style cookies rolled in powdered sugar. Known for their crumbly texture and nutty flavor, they are a festive treat often enjoyed at weddings, holidays, and celebrations.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1/2 cup (60g) powdered sugar, plus more for rolling
  • 1 teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1 cup (120g) finely chopped pecans or walnuts
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in the vanilla extract.
  4. Gradually add the flour and salt, mixing until just combined.
  5. Stir in the chopped nuts until evenly distributed.
  6. Shape dough into 1-inch balls and place them about 1 inch apart on the prepared baking sheets.
  7. Bake for 12–15 minutes, or until the bottoms are lightly golden. Do not overbake.
  8. Allow cookies to cool slightly, then roll them in powdered sugar while still warm.
  9. Cool completely on a wire rack, then roll again in powdered sugar for a final coating.

Notes

  • You can use pecans, walnuts, or almonds depending on preference.
  • Store cookies in an airtight container for up to a week.
  • Rolling the cookies twice in powdered sugar ensures a generous coating.
