- 1/2 cup (60g) powdered sugar, plus more for rolling
- 1 teaspoon vanilla extract
- 2 cups (240g) all-purpose flour
- 1 cup (120g) finely chopped pecans or walnuts
- 1/4 teaspoon salt
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Mix in the vanilla extract.
- Gradually add the flour and salt, mixing until just combined.
- Stir in the chopped nuts until evenly distributed.

- Allow cookies to cool slightly, then roll them in powdered sugar while still warm.
- Cool completely on a wire rack, then roll again in powdered sugar for a final coating.
