Mini Quesadillas

Mini quesadillas are bite-sized, cheesy, and crispy snacks made with tortillas and fillings like cheese, beans, or veggies. Perfect for appetizers, parties, or quick meals.

  • 8 small flour tortillas
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • 1/2 cup cooked black beans (optional)
  • 1/2 cup diced bell peppers
  • 1/4 cup finely chopped onions
  • 1 tbsp olive oil or butter
  • Sour cream, salsa, or guacamole for serving

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Place one tortilla on the skillet, sprinkle cheese evenly, then add beans, peppers, and onions.
  3. Top with another tortilla or fold in half for smaller quesadillas.
  4. Cook for 2–3 minutes per side until golden brown and cheese is melted.
  5. Remove from skillet and cut into small wedges or bite-sized pieces.
  6. Serve warm with sour cream, salsa, or guacamole.

Notes

  • You can add chicken, beef, or mushrooms for extra protein.
  • Use corn tortillas for a gluten-free option.
