Mississippi Pot Roast

Mississippi Pot Roast is a flavorful, tender, and juicy slow-cooked beef roast made with just a few simple ingredients like ranch seasoning, au jus mix, butter, and pepperoncini peppers. It’s a Southern comfort classic that’s perfect for an easy, hearty dinner.

Ingredients

  • 34 lbs chuck roast
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • 1/2 cup (1 stick) unsalted butter
  • 56 pepperoncini peppers
  • 2 tbsp pepperoncini juice (optional)

Instructions

  1. Place the chuck roast in a slow cooker.
  2. Sprinkle the ranch seasoning and au jus mix evenly over the roast.
  3. Place the stick of butter on top of the roast.
  4. Add the pepperoncini peppers around and on top of the roast. Add a splash of pepperoncini juice if desired.
  5. Cover and cook on low for 8 hours, or on high for 4-5 hours, until the roast is tender and falls apart easily.
  6. Shred the roast with two forks and mix with the juices in the slow cooker.
  7. Serve warm with mashed potatoes, rice, or on sandwich rolls.

Notes

  • For a spicier roast, add more pepperoncini or some of the juice.
  • You can sear the roast before placing it in the slow cooker for extra flavor.
  • Leftovers are great for sandwiches or tacos.
