- 2 pounds fresh mussels, scrubbed and debearded
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 can (28 ounces) crushed tomatoes
- 1/2 cup dry white wine
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- Cooked pasta or crusty bread, for serving
- Heat olive oil in a large pot over medium heat.
- Add garlic and onion, sauté until softened and fragrant, about 3-4 minutes.
- Stir in crushed red pepper flakes (if using), then add the crushed tomatoes, white wine, oregano, salt, and black pepper. Bring to a simmer.
- Simmer the sauce uncovered for about 10-15 minutes, stirring occasionally.
- Add the cleaned mussels to the pot, cover, and cook for 5-7 minutes, or until all mussels have opened. Discard any that do not open.
- Stir in chopped parsley and remove from heat.
- Serve hot over pasta or with crusty bread for dipping.
Notes
- Be sure to discard any mussels that do not open during cooking.
- You can substitute white wine with seafood stock or water if desired.
- Fresh herbs like basil can be added for extra flavor.
