One-Pot Spaghetti Bolognese

A hearty and flavorful one-pot spaghetti Bolognese that’s perfect for a quick and easy weeknight dinner. This classic Italian-inspired dish combines ground beef, aromatic vegetables, tomato sauce, and spaghetti all cooked in a single pot.

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, finely chopped
  • 1 celery stick, finely chopped
  • 500g (1 lb) ground beef
  • 2 tablespoons tomato paste
  • 1 can (400g/14 oz) chopped tomatoes
  • 3 cups beef broth
  • 250g (9 oz) spaghetti, broken in half
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrot, and celery. Sauté for 5–7 minutes until softened.
  2. Add the ground beef and cook until browned, breaking it up with a spoon.
  3. Stir in the tomato paste and cook for 2 minutes.
  4. Add the chopped tomatoes, beef broth, oregano, salt, and pepper. Stir well to combine.
  5. Bring to a boil, then add the broken spaghetti. Reduce heat to a simmer and cover partially.
  6. Cook for 12–15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and the sauce has thickened.
  7. Adjust seasoning if needed. Serve hot, topped with grated Parmesan and fresh herbs if desired.

Notes

  • Use whole-wheat or gluten-free pasta if preferred.
  • You can substitute ground turkey or chicken for a lighter version.
  • Add chili flakes for a spicy kick.
  • Leftovers store well in the fridge for up to 3 days.
