One-Pot Spaghetti Bolognese

- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 carrot, finely chopped
- 1 celery stick, finely chopped
- 500g (1 lb) ground beef
- 2 tablespoons tomato paste
- 1 can (400g/14 oz) chopped tomatoes
- 3 cups beef broth
- 250g (9 oz) spaghetti, broken in half
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving (optional)
- Fresh basil or parsley, for garnish (optional)
- Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrot, and celery. Sauté for 5–7 minutes until softened.
- Add the ground beef and cook until browned, breaking it up with a spoon.
- Stir in the tomato paste and cook for 2 minutes.
- Add the chopped tomatoes, beef broth, oregano, salt, and pepper. Stir well to combine.
- Bring to a boil, then add the broken spaghetti. Reduce heat to a simmer and cover partially.
- Cook for 12–15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and the sauce has thickened.
- Adjust seasoning if needed. Serve hot, topped with grated Parmesan and fresh herbs if desired.
Notes
- Use whole-wheat or gluten-free pasta if preferred.
- You can substitute ground turkey or chicken for a lighter version.
- Add chili flakes for a spicy kick.
- Leftovers store well in the fridge for up to 3 days.
