Panna Cotta with Berry Sauce

A creamy and smooth Italian dessert, panna cotta is made from sweetened cream thickened with gelatin and served chilled. It’s elegantly topped with a vibrant, tangy berry sauce that perfectly balances the richness.

Ingredients

  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1/2 cup granulated sugar
  • 1 packet (2 1/4 tsp) unflavored gelatin
  • 1 tsp vanilla extract
  • 2 cups mixed berries (strawberries, raspberries, blueberries)
  • 2 tbsp lemon juice
  • 1/4 cup sugar (for berry sauce)

Instructions

  1. In a small bowl, sprinkle the gelatin over the milk and let it bloom for 5 minutes.
  2. In a saucepan, combine the heavy cream and sugar. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling.
  3. Add the bloomed gelatin mixture to the hot cream and stir until completely dissolved.
  4. Remove from heat and stir in the vanilla extract.
  5. Pour the mixture into serving cups or molds and refrigerate for at least 4 hours or until set.
  6. To make the berry sauce, combine the mixed berries, lemon juice, and sugar in a saucepan. Cook over medium heat for about 10 minutes, stirring occasionally, until the berries break down and the sauce thickens slightly.
  7. Remove from heat and let the sauce cool. Strain if desired for a smoother texture.
  8. Top the set panna cotta with the cooled berry sauce before serving.

Notes

  • Use fresh or frozen berries for the sauce.
  • Lightly oil the molds if you plan to unmold the panna cotta.
  • You can substitute vanilla extract with vanilla bean for a more intense flavor.
