- 4 large egg whites, at room temperature
 
- 1 cup granulated sugar
 
- 1/4 teaspoon cream of tartar
 
- 1/4 teaspoon cotton candy extract (or to taste)
 
- Gel food coloring in pastel shades (pink, blue, purple, etc.)
 
		 
	 
	
		
		
			
- Preheat oven to 200°F (93°C) and line two baking sheets with parchment paper.
 
- In a large mixing bowl, beat egg whites on medium speed until foamy.
 
- Add cream of tartar and continue beating until soft peaks form.
 
- Gradually add sugar, 1 tablespoon at a time, while beating on high speed until stiff, glossy peaks form and sugar is fully dissolved.
 
- Mix in the cotton candy extract.
 
- Divide the meringue mixture into separate bowls and add a small amount of gel food coloring to each to create pastel colors.
 
- Spoon the different colored meringues side by side into a piping bag fitted with a large star tip.
 
- Pipe small mounds or swirls onto the prepared baking sheets.
 
- Bake for 1 hour, then turn off the oven and let the meringues cool inside with the door closed for another hour.
