Pea Purée

A smooth, vibrant green purée made from peas, often served as a side dish or a base for seafood and meats.

Ingredients

  • 2 cups frozen peas
  • 1 tablespoon butter (or olive oil for vegan)
  • 1 small shallot, finely chopped
  • 1 garlic clove, minced
  • 1/4 cup vegetable or chicken stock
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon fresh mint leaves (optional)

Instructions

  1. In a saucepan, melt butter over medium heat and sauté the shallot and garlic until softened, about 2 minutes.
  2. Add the peas and stock to the pan. Simmer for 3-4 minutes until peas are tender.
  3. Remove from heat. Add salt, pepper, and mint if using.
  4. Transfer the mixture to a blender or use an immersion blender to purée until smooth. Add more stock if needed to adjust consistency.
  5. Taste and adjust seasoning. Serve warm or at room temperature.

Notes

  • Use fresh peas if in season; blanch before puréeing.
  • For a richer flavor, add a splash of cream before blending.
  • Can be made ahead and reheated gently before serving.
