Ingredients

Scale
  • 1 and 3/4 cups (220g) all-purpose flour
  • 3/4 cup (65g) unsweetened cocoa powder
  • 2 cups (400g) granulated sugar
  • 1 and 1/2 tsp baking powder
  • 1 and 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water
  • 1 cup (240ml) buttermilk
  • 1 cup (250g) creamy peanut butter
  • 1/2 cup (113g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 23 tbsp heavy cream or milk
  • 1/2 tsp salt (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Optional: chocolate chips or ganache for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients and beat until combined.
  4. Stir in the boiling water (batter will be thin). Then add the buttermilk and mix until smooth.
  5. Pour batter evenly into prepared pans. Bake for 30–35 minutes or until a toothpick inserted comes out clean.
  6. Let cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  7. To make the frosting, beat peanut butter and butter together until creamy.
  8. Add powdered sugar, vanilla, salt, and 2 tbsp of cream or milk. Beat until fluffy. Add more cream if needed for desired consistency.
  9. Once cakes are completely cool, frost the top of one layer, add the second layer, and frost the top and sides.
  10. Optionally, drizzle with melted chocolate or ganache and sprinkle with chocolate chips.

Notes

  • Use natural peanut butter only if it’s well-stirred and smooth.
  • For a deeper chocolate flavor, add 1 tsp of espresso powder to the batter.
  • This cake can be made a day ahead and stored covered at room temperature.
  • Chilling the cake before serving helps firm up the frosting for cleaner slices.
