Peanut Butter Chocolate Rice Cakes

A quick and delicious snack made with rice cakes, peanut butter, and a chocolate topping—perfect for a sweet and satisfying treat.

  • 4 plain rice cakes
  • 1/2 cup peanut butter (creamy or crunchy)
  • 1/2 cup semi-sweet chocolate chips
  • 1 tsp coconut oil (optional, for smoother chocolate)
  • Pinch of sea salt (optional, for garnish)

Instructions

  1. Lay the rice cakes on a parchment-lined tray or plate.
  2. Spread about 2 tablespoons of peanut butter evenly on each rice cake.
  3. In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until melted and smooth.
  4. Spoon or drizzle the melted chocolate over the peanut butter layer on each rice cake.
  5. Sprinkle a pinch of sea salt on top, if desired.
  6. Place the rice cakes in the refrigerator for 15–20 minutes to allow the chocolate to set.
  7. Serve immediately or store in an airtight container in the fridge.
