Ingredients

  • 12 oz pasta (such as penne or spaghetti)
  • 1 cup basil pesto (store-bought or homemade)
  • 1 pint cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Parmesan cheese, for garnish (optional)
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add cherry tomatoes and cook for 3-4 minutes until they start to soften and blister.
  4. Reduce heat to low and stir in the basil pesto.
  5. Add the cooked pasta to the skillet and toss until evenly coated with the pesto and tomatoes.
  6. Season with salt and pepper to taste.
  7. Serve warm, garnished with Parmesan cheese and fresh basil if desired.
