Pulled Chicken Sandwiches

Pulled chicken sandwiches are a flavorful and satisfying meal made with tender shredded chicken, smothered in a tangy barbecue sauce, and served on soft sandwich buns.

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup barbecue sauce
  • 1/2 cup chicken broth
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 sandwich buns
  • Optional: coleslaw for topping

Instructions

  1. Place the chicken breasts in a slow cooker or large pot.
  2. Add barbecue sauce, chicken broth, brown sugar, apple cider vinegar, garlic powder, onion powder, salt, and pepper.
  3. Cook on low for 6-7 hours or on high for 3-4 hours (or simmer in a pot for about 1.5 hours until chicken is tender).
  4. Remove the chicken and shred it using two forks.
  5. Return the shredded chicken to the sauce and mix well to coat.
  6. Serve the pulled chicken on sandwich buns, topped with coleslaw if desired.

Notes

  • Use rotisserie chicken for a quicker version.
  • Adjust the sweetness or tanginess by altering brown sugar and vinegar amounts.
  • Serve with pickles or chips for a complete meal.
