Pumpkin French Toast

A cozy and flavorful twist on classic French toast made with pumpkin puree and warm spices, perfect for autumn breakfasts or brunch.

Ingredients

  • 4 large eggs
  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • Pinch of salt
  • 8 slices of brioche or challah bread
  • Butter or oil for cooking
  • Maple syrup, powdered sugar, or whipped cream for serving

Instructions

  1. In a mixing bowl, whisk together eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
  2. Preheat a skillet or griddle over medium heat and lightly grease with butter or oil.
  3. Dip each slice of bread into the pumpkin mixture, coating both sides well.
  4. Place dipped bread slices on the skillet and cook for 2–3 minutes per side, or until golden brown.
  5. Serve warm with maple syrup, powdered sugar, or whipped cream as desired.

Notes

  • Use slightly stale bread to prevent sogginess.
  • Adjust spices to taste for more or less warmth.
  • Can be made ahead and kept warm in the oven at low temperature until serving.
