- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 ½ cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- Food coloring (red, orange, yellow, green, blue, purple)
- 1.5 quarts vanilla ice cream (or any preferred flavor), softened
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add the egg and vanilla extract; mix until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients.
- Divide the dough into six equal parts and tint each with a different food coloring.
- Roll each colored dough into ropes and twist them together to create a rainbow swirl. Flatten gently and cut out round cookies.
- Place on prepared baking sheets and bake for 8–10 minutes until just set. Let cool completely.
- Scoop softened ice cream onto the flat side of a cookie and top with another to form a sandwich.
- Wrap each sandwich in plastic wrap and freeze for at least 2 hours before serving.
