Roasted Cauliflower Salad

A flavorful and healthy roasted cauliflower salad featuring tender caramelized cauliflower, fresh vegetables, and a zesty dressing. Perfect as a side dish or a light main course.

Ingredients

  • 1 medium head cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tbsp lemon juice
  • 1 tbsp tahini (optional)
  • 1 clove garlic, minced

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss cauliflower florets with olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast for 25–30 minutes, stirring halfway, until golden brown and tender.
  4. In a large bowl, combine roasted cauliflower, cherry tomatoes, red onion, parsley, and feta (if using).
  5. In a small bowl, whisk together lemon juice, tahini (if using), and garlic to make the dressing.
  6. Pour dressing over the salad and toss well to combine.
  7. Serve warm or at room temperature.

Notes

  • For a vegan version, omit the feta cheese or use a plant-based alternative.
  • Add toasted nuts or seeds for extra crunch.
  • Can be prepared ahead and refrigerated for up to 2 days.
