- 1 medium head cauliflower, cut into florets
 
- 2 tbsp olive oil
 
- 1/2 tsp salt
 
- 1/4 tsp black pepper
 
- 1 cup cherry tomatoes, halved
 
- 1/2 small red onion, thinly sliced
 
- 1/4 cup fresh parsley, chopped
 
- 1/4 cup feta cheese, crumbled (optional)
 
- 2 tbsp lemon juice
 
- 1 tbsp tahini (optional)

- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
 
- Toss cauliflower florets with olive oil, salt, and pepper. Spread evenly on the baking sheet.
 
- Roast for 25–30 minutes, stirring halfway, until golden brown and tender.
 
- In a large bowl, combine roasted cauliflower, cherry tomatoes, red onion, parsley, and feta (if using).
 
- In a small bowl, whisk together lemon juice, tahini (if using), and garlic to make the dressing.
 
- Pour dressing over the salad and toss well to combine.
