Roasted Chickpeas

Crispy roasted chickpeas are a healthy, protein-packed snack that can be enjoyed on their own or added as a crunchy topping to salads and bowls.

Ingredients

  • 2 cups canned chickpeas (drained and rinsed)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika (optional)
  • 1/2 tsp garlic powder (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Drain and rinse the chickpeas, then pat them dry thoroughly with a kitchen towel.
  3. Transfer chickpeas to a bowl and toss with olive oil, salt, pepper, and optional spices.
  4. Spread chickpeas evenly on a baking sheet lined with parchment paper.
  5. Roast for 25–35 minutes, shaking the pan halfway through, until golden and crispy.
  6. Allow to cool slightly before serving. They will crisp up more as they cool.

Notes

  • Make sure chickpeas are very dry before roasting for maximum crispiness.
  • Adjust spices to your taste—cumin, chili powder, or curry powder work well.
  • Store in an airtight container at room temperature for up to 3 days.
