These Shrimp Rolls are a delicious take on the classic New England-style lobster roll, using tender shrimp tossed in a creamy, tangy dressing served in a buttered and toasted split-top bun.

  • 1 lb cooked shrimp, peeled, deveined, and chopped
  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp finely chopped celery
  • 1 tbsp finely chopped fresh chives
  • Salt and pepper, to taste
  • 4 split-top hot dog buns
  • 2 tbsp butter, softened

Instructions

  1. In a medium bowl, combine the chopped shrimp, mayonnaise, lemon juice, Dijon mustard, celery, and chives.
  2. Season the mixture with salt and pepper to taste. Mix gently until evenly coated.
  3. Butter the sides of each bun and toast in a skillet over medium heat until golden brown.
  4. Spoon the shrimp mixture into the toasted buns.
  5. Serve immediately while the buns are warm.

Notes

  • You can substitute Greek yogurt for mayonnaise for a lighter version.
  • Chill the shrimp mixture for 30 minutes before serving for best flavor.
  • Split-top buns are traditional, but brioche rolls work well too.
