Slow Cooker Salsa Chicken

A simple and flavorful slow cooker recipe where chicken breasts are cooked with salsa and spices, resulting in tender, juicy meat perfect for tacos, burritos, salads, or over rice.

  • 4 boneless, skinless chicken breasts
  • 2 cups salsa
  • 1 packet taco seasoning (about 1 oz)
  • 1/2 cup shredded cheddar cheese (optional, for topping)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Sprinkle taco seasoning evenly over the chicken.
  3. Pour salsa over the chicken, ensuring they are well covered.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and fully cooked.
  5. Shred the chicken with two forks directly in the slow cooker and stir to mix with the salsa.
  6. Top with shredded cheese (if using) and let it melt for a few minutes before serving.
  7. Garnish with fresh cilantro and serve in tacos, burritos, or over rice.

Notes

  • You can use chicken thighs instead of breasts for extra flavor.
  • For a spicier dish, use hot salsa or add jalapeños.
  • Leftovers keep well in the fridge for up to 4 days and freeze well for meal prep.
