Sopa Azteca (Tortilla Soup)

Sopa Azteca, also known as tortilla soup, is a traditional Mexican dish made with a savory tomato-chile broth, crispy fried tortilla strips, and garnished with fresh avocado, cheese, and crema.

  • 6 corn tortillas, cut into strips
  • 2 tbsp vegetable oil
  • 1 medium white onion, chopped
  • 3 cloves garlic, minced
  • 4 medium tomatoes, roasted and peeled
  • 2 dried pasilla chiles, seeded and torn into pieces
  • 4 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 avocado, diced
  • 1/2 cup queso fresco or panela cheese, crumbled
  • 1/4 cup Mexican crema or sour cream
  • Fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Fry tortilla strips until golden and crisp. Remove and drain on paper towels.
  2. In the same pot, sauté onion and garlic until fragrant and softened.
  3. Blend roasted tomatoes and pasilla chiles until smooth. Add this mixture to the pot and cook for 5 minutes, stirring occasionally.
  4. Pour in chicken broth, season with salt and pepper, and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Serve hot, placing tortilla strips in bowls first, then ladling soup over them.
  6. Top each serving with diced avocado, crumbled cheese, crema, cilantro, and a squeeze of lime.

Notes

  • You can use vegetable broth to make it vegetarian.
  • Adjust chile quantity for desired spice level.
  • For extra flavor, add shredded chicken.
