- 1 lb (450g) shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- 8 small corn tortillas
- 1 ripe mango, diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 2 tbsp fresh cilantro, chopped
- Juice of 1 lime
- In a bowl, combine chili powder, paprika, cumin, cayenne, salt, and pepper. Toss shrimp with olive oil and spice mixture until evenly coated.
- Heat a skillet over medium-high heat. Add shrimp and cook 2–3 minutes per side until opaque and cooked through. Remove from heat.
- In a separate bowl, mix mango, red bell pepper, red onion, jalapeño, cilantro, and lime juice. Season with salt to taste.
- Warm tortillas in a dry skillet or tortilla warmer until soft and pliable.
- Assemble tacos by placing shrimp on each tortilla and topping with mango salsa. Serve immediately.
Notes
- For extra heat, leave the jalapeño seeds in the salsa.
- Substitute corn tortillas with flour tortillas if preferred.
- Can add sliced avocado or a dollop of sour cream for creaminess.
