Spinach and Potato Mash

A creamy and nutritious mash made from potatoes and fresh spinach, perfect as a side dish or light vegetarian meal.

Ingredients

  • 500g potatoes, peeled and chopped
  • 150g fresh spinach leaves
  • 2 tbsp butter (or olive oil for vegan option)
  • 1/4 cup milk (or plant-based milk for vegan option)
  • Salt, to taste
  • Black pepper, to taste
  • 1 garlic clove, minced (optional)

Instructions

  1. Boil the potatoes in salted water for 15-20 minutes, or until tender.
  2. While potatoes are cooking, steam or sauté spinach until wilted, then drain any excess moisture.
  3. Drain the cooked potatoes and return them to the pot.
  4. Add butter and milk to the potatoes and mash until smooth.
  5. Stir in the spinach and garlic (if using), and mix well.
  6. Season with salt and pepper to taste.
  7. Serve warm as a side dish or a light meal.

Notes

  • Use baby spinach for a milder flavor.
  • For extra creaminess, add a spoonful of cream cheese or sour cream.
  • This dish pairs well with grilled meats or roasted vegetables.
