Spinach and Strawberry Salad

A light and refreshing salad made with tender spinach, sweet strawberries, crunchy nuts, and a tangy balsamic dressing.

  • 6 cups fresh baby spinach
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/3 cup sliced almonds or pecans, toasted
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey or maple syrup
  • 1/3 cup olive oil
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. In a large salad bowl, combine spinach, strawberries, red onion, feta cheese, and nuts.
  2. In a small bowl or jar, whisk together balsamic vinegar, honey (or maple syrup), olive oil, Dijon mustard, salt, and pepper until smooth.
  3. Drizzle dressing over the salad just before serving and toss gently to combine.

Notes

  • For a vegan version, omit feta or use a plant-based alternative.
  • Add grilled chicken or shrimp for a heartier meal.
  • Best served fresh, but dressing can be made ahead and refrigerated for up to 5 days.
