Ingredients

Scale
  • 6 cups baby spinach, washed and dried
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced almonds, toasted (optional)
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until emulsified.
  2. Place the spinach in a large salad bowl. Add the sliced strawberries and red onion.
  3. Drizzle the vinaigrette over the salad and gently toss to combine.
  4. Top with crumbled feta cheese and toasted almonds.
  5. Serve immediately, enjoying the bright flavors and contrasting textures.

Notes

  • Substitute goat cheese for feta if you prefer a creamier texture.
  • For extra crunch, swap almonds for pecans or walnuts.
  • Add sliced avocado or grilled chicken to boost protein.
  • Prepare the dressing up to 2 days ahead and store in the fridge.
