Steak and Corn Salad with Lime Dressing

- 1 lb flank or skirt steak
- Salt and pepper to taste
- 2 ears of corn, husked
- 1 tbsp olive oil
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 2 tbsp olive oil (for dressing)
- 1 clove garlic, minced
- 1 tsp honey
- Salt and pepper to taste (for dressing)
- Preheat grill or grill pan to medium-high heat.
- Season steak with salt and pepper. Grill for 4–5 minutes per side, or until desired doneness. Let rest before slicing.
- Brush corn with 1 tbsp olive oil and grill until lightly charred, about 10 minutes. Let cool, then cut kernels off the cob.
- In a large bowl, combine salad greens, cherry tomatoes, red onion, avocado, grilled corn, and cilantro.
- In a small bowl, whisk together lime juice, 2 tbsp olive oil, minced garlic, honey, salt, and pepper.
- Slice steak thinly against the grain.
- Toss salad with dressing and top with sliced steak. Serve immediately.
Notes
- Use leftover steak to save time.
- You can substitute corn with canned or frozen corn if fresh is unavailable.
- Add crumbled feta or queso fresco for extra flavor.
