Steak and Corn Salad with Lime Dressing

A fresh and hearty salad featuring grilled steak, sweet corn, and a zesty lime dressing. Perfect for summer lunches or light dinners.

Ingredients

  • 1 lb flank or skirt steak
  • Salt and pepper to taste
  • 2 ears of corn, husked
  • 1 tbsp olive oil
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tbsp olive oil (for dressing)
  • 1 clove garlic, minced
  • 1 tsp honey
  • Salt and pepper to taste (for dressing)

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Season steak with salt and pepper. Grill for 4–5 minutes per side, or until desired doneness. Let rest before slicing.
  3. Brush corn with 1 tbsp olive oil and grill until lightly charred, about 10 minutes. Let cool, then cut kernels off the cob.
  4. In a large bowl, combine salad greens, cherry tomatoes, red onion, avocado, grilled corn, and cilantro.
  5. In a small bowl, whisk together lime juice, 2 tbsp olive oil, minced garlic, honey, salt, and pepper.
  6. Slice steak thinly against the grain.
  7. Toss salad with dressing and top with sliced steak. Serve immediately.

Notes

  • Use leftover steak to save time.
  • You can substitute corn with canned or frozen corn if fresh is unavailable.
  • Add crumbled feta or queso fresco for extra flavor.
