Steak with Garlic Butter

Juicy and tender steak seared to perfection and topped with a rich, flavorful garlic butter. A simple yet indulgent dish perfect for any special occasion or a hearty weeknight meal.

Ingredients

Scale
  • 2 ribeye steaks (about 1 inch thick)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
  • 1 teaspoon fresh rosemary, chopped (or 1/2 tsp dried)

Instructions

  1. Remove steaks from the refrigerator and let them sit at room temperature for 30 minutes.
  2. Season both sides of the steaks generously with salt and pepper.
  3. Heat olive oil in a heavy skillet (preferably cast iron) over high heat until very hot.
  4. Place steaks in the skillet and sear for 3–4 minutes on each side, or until a crust forms and the desired doneness is reached.
  5. Reduce heat to medium-low. Add butter, garlic, thyme, and rosemary to the skillet.
  6. Spoon the melted garlic butter over the steaks repeatedly for about 1–2 minutes.
  7. Remove steaks from the skillet and let them rest for 5–10 minutes before slicing.
  8. Serve hot, drizzled with remaining garlic butter from the pan.

Notes

  • Use a meat thermometer for perfect doneness: 130°F for medium-rare, 140°F for medium.
  • Letting the steak rest after cooking helps retain juices.
  • Fresh herbs provide more flavor but dried herbs can be used in a pinch.
