- 1 box (15.25 oz) strawberry cake mix
- 1/3 cup vegetable oil
- 2 large eggs
- 4 oz cream cheese, softened
- 1/2 cup white chocolate chips
- 1/2 tsp vanilla extract
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, beat the cream cheese until smooth.
- Add the eggs, oil, and vanilla extract. Mix until well combined.
- Stir in the strawberry cake mix until a dough forms.
- Fold in the white chocolate chips.
- Use a cookie scoop to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes or until the edges are set and the centers are slightly soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Store cookies in an airtight container for up to 5 days.
- You can chill the dough for thicker cookies.
- Optional: Add diced freeze-dried strawberries for extra flavor.
