Stuffed Bell Pepper Boats

Colorful bell peppers stuffed with a savory mixture of ground meat, rice, vegetables, and seasonings, then baked until tender and delicious. A wholesome and satisfying meal perfect for lunch or dinner.

  • 4 large bell peppers, halved and seeds removed
  • 1 lb ground beef or ground turkey
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the bell peppers by slicing them in half lengthwise and removing seeds and membranes.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, cooking until softened.
  4. Add ground beef or turkey to the skillet and cook until browned, breaking up any large pieces.
  5. Stir in diced tomatoes, cooked rice, Italian seasoning, paprika, salt, and pepper. Cook for 5 minutes until well combined.
  6. Arrange bell pepper halves in a baking dish. Spoon the filling mixture into each pepper boat.
  7. Top each stuffed pepper with shredded cheese.
  8. Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, until cheese is melted and bubbly.
  9. Remove from oven, garnish with fresh parsley, and serve warm.

Notes

  • You can substitute quinoa or cauliflower rice for a lighter version.
  • Use different colored bell peppers for a more vibrant presentation.
  • These can be made ahead of time and refrigerated before baking.
  • For extra flavor, add a splash of Worcestershire sauce or soy sauce to the filling.
