- 4 large bell peppers, halved and seeds removed
 
- 1 lb ground beef or ground turkey
 
- 1 cup cooked rice
 
- 1 small onion, diced
 
- 2 cloves garlic, minced
 
- 1 cup diced tomatoes (canned or fresh)
 
- 1 cup shredded mozzarella or cheddar cheese
 
- 2 tbsp olive oil
 
- 1 tsp Italian seasoning
 
- 1/2 tsp paprika
 
- Salt and black pepper, to taste

- Preheat oven to 375°F (190°C).
 
- Prepare the bell peppers by slicing them in half lengthwise and removing seeds and membranes.
 
- In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, cooking until softened.
 
- Add ground beef or turkey to the skillet and cook until browned, breaking up any large pieces.
 
- Stir in diced tomatoes, cooked rice, Italian seasoning, paprika, salt, and pepper. Cook for 5 minutes until well combined.
 
- Arrange bell pepper halves in a baking dish. Spoon the filling mixture into each pepper boat.
 
- Top each stuffed pepper with shredded cheese.
 
- Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, until cheese is melted and bubbly.
 
- Remove from oven, garnish with fresh parsley, and serve warm.
