Stuffed Bell Peppers

A classic comfort dish featuring tender bell peppers stuffed with a savory mixture of ground meat, rice, vegetables, and seasonings, baked until flavorful and satisfying.

  • 4 large bell peppers (any color)
  • 1 lb (450 g) ground beef or turkey
  • 1 cup cooked rice
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes. Set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
  4. Add the ground meat and cook until browned, breaking it apart as it cooks.
  5. Stir in diced tomatoes, cooked rice, oregano, basil, salt, and pepper. Simmer for 5 minutes.
  6. Stuff the bell peppers with the meat and rice mixture.
  7. Place stuffed peppers upright in a baking dish and sprinkle with cheese.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
  9. Serve hot.
