- 16 large white mushrooms
- 3 tablespoons olive oil, divided
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons cream cheese (optional for creaminess)
- Salt and black pepper, to taste
- Preheat the oven to 375°F (190°C).
- Clean the mushrooms with a damp cloth and remove the stems. Finely chop the stems and set aside.
- Heat 1 tablespoon olive oil in a skillet over medium heat. Add chopped mushroom stems and garlic; sauté until softened, about 3 minutes.
- Stir in breadcrumbs, Parmesan cheese, parsley, cream cheese (if using), salt, and pepper. Mix until well combined.
- Stuff each mushroom cap with the prepared filling and arrange them on a baking sheet.
- Drizzle the stuffed mushrooms with the remaining olive oil.
- Bake for 20 minutes, or until mushrooms are tender and the tops are golden brown.
- Serve warm as an appetizer or side dish.
Notes
- You can substitute cream cheese with ricotta for a lighter filling.
- For extra flavor, add chopped cooked bacon or sausage to the filling.
- Make ahead by stuffing mushrooms, refrigerating, and baking just before serving.
