- 4 medium zucchinis
- 1 tablespoon olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1/2 pound ground turkey or beef
- 1 cup marinara sauce
- 1/2 cup cooked quinoa or rice (optional)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Preheat oven to 375°F (190°C).
- Slice zucchinis in half lengthwise and scoop out the flesh, leaving a 1/4-inch thick shell. Reserve the scooped flesh and chop finely.
- Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté for 2-3 minutes.
- Add ground meat and cook until browned. Add chopped zucchini flesh, Italian seasoning, salt, and pepper. Cook for 5 minutes.
- Stir in marinara sauce and quinoa or rice if using. Simmer for 2-3 minutes until thickened.
- Place zucchini halves in a baking dish. Spoon the filling into each boat.
- Top with mozzarella and Parmesan cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 5-10 minutes until cheese is golden and bubbly.
- Garnish with chopped parsley before serving.
