Stuffed Zucchini Boats are a healthy and flavorful dish made by hollowing out zucchinis and filling them with a savory mixture of vegetables, meat, or grains, then baking to perfection.

  • 4 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1/2 pound ground turkey or beef
  • 1 cup marinara sauce
  • 1/2 cup cooked quinoa or rice (optional)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis in half lengthwise and scoop out the flesh, leaving a 1/4-inch thick shell. Reserve the scooped flesh and chop finely.
  3. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté for 2-3 minutes.
  4. Add ground meat and cook until browned. Add chopped zucchini flesh, Italian seasoning, salt, and pepper. Cook for 5 minutes.
  5. Stir in marinara sauce and quinoa or rice if using. Simmer for 2-3 minutes until thickened.
  6. Place zucchini halves in a baking dish. Spoon the filling into each boat.
  7. Top with mozzarella and Parmesan cheese.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 5-10 minutes until cheese is golden and bubbly.
  9. Garnish with chopped parsley before serving.

Notes

  • You can substitute the ground meat with plant-based protein for a vegetarian version.
  • Feel free to add other vegetables like bell peppers or mushrooms to the filling.
  • Use low-fat cheese for a lighter option.
