Stuffed Zucchini Boats are a healthy and flavorful dish featuring hollowed-out zucchini filled with a savory mixture of meat, vegetables, and cheese, then baked to perfection.

  • 4 medium zucchinis
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey or beef
  • 1 cup marinara sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchinis in half lengthwise and scoop out the flesh, leaving about 1/4-inch thickness to form boats. Set aside the scooped flesh.
  3. Place zucchini boats in a baking dish.
  4. Heat olive oil in a skillet over medium heat. Add onion and garlic, cooking until softened.
  5. Add ground meat and cook until browned. Drain excess fat.
  6. Chop the reserved zucchini flesh and add it to the skillet with the meat. Cook for 2-3 minutes.
  7. Stir in marinara sauce, salt, pepper, and Italian seasoning. Simmer for 5 minutes.
  8. Spoon the meat mixture into the zucchini boats evenly.
  9. Top with mozzarella and Parmesan cheese.
  10. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes or until cheese is golden and bubbly.
  11. Garnish with chopped parsley before serving.

  • You can substitute ground turkey with beef, chicken, or a plant-based alternative.
  • Add cooked rice or quinoa to the stuffing for extra texture.
