Tacos al Pastor

Tacos al pastor are a traditional Mexican street food featuring marinated pork cooked on a vertical spit, thinly sliced, and served in corn tortillas with pineapple, onions, cilantro, and salsa.

  • 2 lbs pork shoulder, thinly sliced
  • 3 tbsp achiote paste
  • 1/4 cup apple cider vinegar
  • 3 cloves garlic, minced
  • 1/2 cup pineapple juice
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp ground cloves
  • 1/2 tsp black pepper
  • 1 tbsp salt
  • 1/2 cup fresh pineapple, diced
  • 12 small corn tortillas
  • 1/2 cup white onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • Lime wedges, for serving
  • Salsa of choice, for serving

Instructions

  1. In a large bowl, combine achiote paste, apple cider vinegar, garlic, pineapple juice, oregano, cumin, paprika, cloves, pepper, and salt to make the marinade.
  2. Add the sliced pork to the marinade and mix well to coat. Cover and refrigerate for at least 4 hours, preferably overnight.
  3. Preheat a grill or skillet over medium-high heat.
  4. Cook the marinated pork slices until fully cooked and slightly charred, about 3–4 minutes per side.
  5. Dice the cooked pork and toss with the diced pineapple.
  6. Warm the corn tortillas on the grill or in a skillet.
  7. Assemble the tacos by adding pork and pineapple mixture to each tortilla, then topping with onion, cilantro, and salsa.
  8. Serve immediately with lime wedges on the side.

Notes

  • Marinating the pork overnight intensifies the flavor.
  • Traditionally, pork is cooked on a vertical spit (trompo), but a grill or skillet works well at home.
  • Fresh pineapple adds a sweet balance to the savory pork.
