TikTok Milk Mochi Bites

Chewy, lightly sweet milk mochi cubes baked until puffy and dusted with cornstarch—an addictively soft bite-sized treat that went viral on TikTok.

  • 1 cup (240 ml) whole milk
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (120 g) glutinous rice flour (mochiko)
  • 3 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • Pinch of fine salt
  • 2 tablespoons cornstarch, for dusting

Instructions

  1. Preheat your oven to 350 °F (175 °C). Lightly grease or line an 8×8-inch (20 cm) baking pan with parchment.
  2. In a medium bowl whisk together milk, melted butter, egg, and vanilla until homogenous.
  3. In a separate bowl sift the glutinous rice flour, sugar, baking powder, and salt. Stir to combine.
  4. Pour the wet mixture into the dry ingredients and whisk until a smooth, lump-free batter forms.
  5. Transfer batter to the prepared pan, smoothing the top.
  6. Bake for 18–22 minutes, or until the surface is just set and a toothpick inserted comes out clean (it will remain pale).
  7. Cool in the pan 10 minutes, then lift out and place on a cutting board. While still warm, cut into 1-inch (2.5 cm) cubes.
  8. Dust cubes all over with cornstarch to prevent sticking. Serve warm or at room temperature.

Notes

  • Use mochiko or any sweet rice flour—regular rice flour will not work.
  • For a dairy-free version swap milk with coconut or oat milk and butter with neutral oil.
  • Mochi dries out quickly; store in an airtight container up to 2 days or freeze for longer keeping.
  • Lightly toast cooled cubes in an air-fryer for a crispy exterior and molten interior.
