Tofu Scramble with Peppers and Onions

A healthy and delicious vegan alternative to scrambled eggs, this tofu scramble features sautéed peppers and onions, making it a colorful and flavorful meal.

  • 1 block of firm tofu
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small onion, diced
  • 2 tbsp olive oil
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp black salt (or regular salt)
  • Freshly ground black pepper, to taste
  • Chopped fresh cilantro, for garnish (optional)

Instructions

  1. Drain the tofu and press to remove excess water. Crumble the tofu into small pieces using your hands or a fork.
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and bell peppers. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
  3. Add the crumbled tofu to the skillet and stir to combine with the vegetables.
  4. Sprinkle the turmeric, garlic powder, cumin, black salt, and black pepper over the tofu and vegetables. Stir well to ensure even seasoning.
  5. Cook for another 5-7 minutes, stirring occasionally, until the tofu is lightly browned and heated through.
  6. Garnish with chopped fresh cilantro, if desired, and serve hot.

Notes

  • This dish can be served with toast, avocado, or as a filling for a wrap.
  • Feel free to add other vegetables like spinach, mushrooms, or tomatoes for extra flavor.
  • For a spicier version, add a pinch of chili flakes or diced jalapeño peppers.
