- 2 slices turkey bacon
- 2 large eggs
- 1 whole wheat tortilla
- 1/4 cup shredded cheese (optional)
- 1 tbsp olive oil or butter
- Salt and pepper, to taste
- 1/4 cup diced vegetables (optional, such as spinach, bell peppers, or onions)
- In a skillet, cook the turkey bacon over medium heat until crispy, about 4-5 minutes per side. Remove from the pan and set aside.
- In the same skillet, add olive oil or butter. Crack the eggs into the pan and scramble them. Season with salt and pepper to taste. Cook until eggs are fully set.
- If using, add the diced vegetables to the skillet during the last minute of cooking the eggs.
- Warm the whole wheat tortilla in a separate skillet for about 30 seconds on each side, or until soft and warm.
- Assemble the wrap by placing the scrambled eggs and turkey bacon in the center of the tortilla. Add shredded cheese if desired.
- Fold the sides of the tortilla over the filling and roll it up into a wrap.
- Serve immediately and enjoy!
