Vegetable Fried Rice

A quick and flavorful Vegetable Fried Rice packed with colorful veggies and savory seasoning, perfect as a side or main dish.

  • 2 cups cooked rice (preferably day-old)
  • 1 tablespoon vegetable oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup diced carrots
  • 1/2 cup green peas
  • 1/2 cup chopped bell pepper (any color)
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt to taste
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chopped onion and sauté for 2-3 minutes until translucent.
  3. Add garlic, carrots, peas, and bell pepper. Cook for 4-5 minutes until vegetables are tender.
  4. Add the cooked rice and stir well to combine with the vegetables.
  5. Pour in soy sauce and sesame oil. Stir-fry for another 2-3 minutes, ensuring everything is evenly coated.
  6. Season with salt and black pepper to taste.
  7. Garnish with chopped green onions and serve hot.

Notes

  • Use cold, day-old rice for best texture.
  • Feel free to add other vegetables like corn, broccoli, or mushrooms.
  • Can be made vegan by ensuring soy sauce is vegan-certified.
  • Add scrambled tofu or eggs for extra protein.
