Watermelon and Mint Salad

- 4 cups watermelon, cubed (about 1 small watermelon)
- 1/4 cup fresh mint leaves, roughly chopped
- 2 tablespoons lime juice (about 1 lime)
- 1 tablespoon extra-virgin olive oil
- 1 teaspoons honey or agave (optional)
- Salt and freshly ground black pepper, to taste
- 1/4 cup feta cheese, crumbled (optional)
- In a large bowl, combine the watermelon cubes and chopped mint leaves.
- In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper until well emulsified.
- Pour the dressing over the watermelon and mint, and gently toss to coat all pieces evenly.
- Let the salad rest for 5 minutes to allow flavors to meld.
- Just before serving, sprinkle the crumbled feta cheese on top, if desired.
- Serve chilled or at room temperature.
Notes
- For extra crunch, add a handful of toasted pine nuts or sliced almonds.
- You can substitute lime juice with lemon juice if preferred.
- If you like a spicier kick, add a pinch of red pepper flakes to the dressing.
