Watermelon and Mint Salad

A light and refreshing summer salad featuring juicy watermelon, cool mint, and tangy lime dressing.

Ingredients

  • 4 cups watermelon, cubed (about 1 small watermelon)
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons lime juice (about 1 lime)
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoons honey or agave (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup feta cheese, crumbled (optional)

Instructions

  1. In a large bowl, combine the watermelon cubes and chopped mint leaves.
  2. In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper until well emulsified.
  3. Pour the dressing over the watermelon and mint, and gently toss to coat all pieces evenly.
  4. Let the salad rest for 5 minutes to allow flavors to meld.
  5. Just before serving, sprinkle the crumbled feta cheese on top, if desired.
  6. Serve chilled or at room temperature.

Notes

  • For extra crunch, add a handful of toasted pine nuts or sliced almonds.
  • You can substitute lime juice with lemon juice if preferred.
  • If you like a spicier kick, add a pinch of red pepper flakes to the dressing.
