Ingredients

  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze or reduction (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. In a large mixing bowl, combine the cubed watermelon, crumbled feta, chopped mint, and sliced red onion.
  2. Drizzle the olive oil over the salad and gently toss to combine.
  3. Season with salt and black pepper to taste.
  4. Transfer to a serving dish and drizzle with balsamic glaze if using.
  5. Serve immediately or chill in the refrigerator for 15-20 minutes before serving.
