Watermelon Feta Salad

A refreshing and light summer salad made with juicy watermelon, tangy feta cheese, fresh mint, and a simple lime dressing.

Ingredients

  • 4 cups watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. In a large bowl, combine the watermelon cubes and crumbled feta cheese.
  2. Add chopped mint leaves to the bowl.
  3. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  4. Drizzle the dressing over the watermelon mixture and gently toss to combine.
  5. Chill in the refrigerator for 15-30 minutes before serving.

Notes

  • Use seedless watermelon for easier preparation.
  • Add arugula or cucumber for extra crunch and flavor.
  • Best served fresh and chilled.
