Zucchini bread bars

Moist and flavorful zucchini bread bars packed with shredded zucchini, warm spices, and a tender crumb. A delicious and wholesome snack or dessert.

  • 1 cup grated zucchini (squeezed to remove excess moisture)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the brown sugar, oil, egg, and vanilla until well combined.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Stir in the grated zucchini.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan before cutting into bars.

Notes

  • Optional add-ins: chopped nuts, chocolate chips, or raisins.
  • Bars can be stored in an airtight container for up to 3 days or refrigerated for longer freshness.
  • Use a clean kitchen towel or paper towel to squeeze excess moisture from the zucchini.
