- 1 cup grated zucchini (squeezed to remove excess moisture)
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the brown sugar, oil, egg, and vanilla until well combined.
- Fold the dry ingredients into the wet mixture until just combined.
- Stir in the grated zucchini.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan before cutting into bars.
Notes
- Optional add-ins: chopped nuts, chocolate chips, or raisins.
- Bars can be stored in an airtight container for up to 3 days or refrigerated for longer freshness.
- Use a clean kitchen towel or paper towel to squeeze excess moisture from the zucchini.
