Zucchini Noodles with Chicken

A light and healthy dish featuring spiralized zucchini noodles tossed with tender chicken, garlic, and a hint of lemon for a fresh, low-carb meal.

Ingredients

  • 2 medium zucchinis, spiralized
  • 2 chicken breasts (about 250g each), sliced into strips
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon lemon juice
  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Spiralize the zucchinis into noodles and set aside.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  3. Add the chicken strips, season with salt and pepper, and cook for 5–7 minutes until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, add the remaining olive oil and garlic. Sauté for 30 seconds until fragrant.
  5. Add the zucchini noodles and cook for 2–3 minutes, stirring gently.
  6. Return the chicken to the skillet, add lemon juice, and toss everything together.
  7. Sprinkle with Parmesan cheese (if using) and garnish with fresh parsley before serving.

Notes

  • For extra flavor, add a splash of chicken broth when cooking the zucchini noodles.
  • Do not overcook zucchini noodles or they will become soggy.
  • Great served with a side salad for a complete meal.
