- 2 medium zucchinis, spiralized
- 2 chicken breasts (about 250g each), sliced into strips
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon lemon juice
- 2 tablespoons grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
- Spiralize the zucchinis into noodles and set aside.
- Heat 1 tablespoon olive oil in a large skillet over medium heat.
- Add the chicken strips, season with salt and pepper, and cook for 5–7 minutes until golden brown and cooked through. Remove and set aside.
- In the same skillet, add the remaining olive oil and garlic. Sauté for 30 seconds until fragrant.
- Add the zucchini noodles and cook for 2–3 minutes, stirring gently.
- Return the chicken to the skillet, add lemon juice, and toss everything together.
- Sprinkle with Parmesan cheese (if using) and garnish with fresh parsley before serving.
Notes
- For extra flavor, add a splash of chicken broth when cooking the zucchini noodles.
- Do not overcook zucchini noodles or they will become soggy.
- Great served with a side salad for a complete meal.
